Located at the ground floor of Mondrian Duxton Singapore, Firebird by Suetomi introduces an omakase experience unlike any other. This intimate 22-seater is Chef Makoto Suetomi’s first international outpost and pays homage to tori—chicken—through a 13-course journey guided by wood-fire mastery.

The culinary narrative is deeply rooted in Japanese tradition, where each part of the chicken is prepared with care and precision. Grilled, smoked or sautéed over wood flame, each dish builds on the last with calm restraint. Here, heat is not simply a cooking method, but a language. The chefs work in quiet concentration, reading the fire and letting it draw out the essence of each cut.

Firebird’s design, conceptualised by HW Homeworks, mirrors the discipline and warmth of the food itself. The space features soft lighting, earthy finishes and natural materials that frame the open kitchen. Seating is intentionally varied to offer different ways of engaging with the space. From counter seats angled toward the open hearth to private dining rooms and bar-side settings, each area is designed to reflect the same quiet intensity and warmth.

Shōji screens, layered textures and clean-lined carpentry complete the atmosphere. The overall design balances intimacy and openness, creating a refined setting where each element feels purposeful.
